I am a fanatic when it comes to tomato sauces in Food. I feel that the richness of flavour that tomato and herb based sauces offer can really bring out delicious flavours, in just about any recipe. So without further ado, indulge yourself with my latest mouth-watering masterpiece recipe.

Serves 2. Preparing time: 10 minutes. Cooking time: 40 minutes.


2 Sweet Potatoes

Half a Red Pepper

Half a tin of Chopped Tomatoes

50g Grated Mozzarella Cheese

2tbsp Olive Oil



Salt and Pepper



2 Pork Loins

2tsp Tomato Puree

2 Corn on the Cob (optional, you can have any vegetables)


1.) Peel sweet potatoes and chop. Put into a pan of boiling water and boil for 20 minutes.

2.) Meanwhile, heat 1tbsp olive oil in a frying pan. Slice and dice the red pepper, once the oil is ready, lower the heat to medium and place the diced peppers into the pan with tin chopped tomatoes. Season with salt and pepper, basil and oregano, to your own preference. Leave for 15 minutes, stirring occasionally.

3.) Pour 1tbsp of olive oil into another frying pan and heat. Prepare Pork Loins, massaging a pinch of salt and pepper into the meat, on both sides. Then place into the frying pan.

4.) With remaining tomato juice in the chopped tomato tin, add 2 tsp of tomato puree with 50ml of water and stir so that you have a watery tomato paste.

And add into frying pan with Pork Loins. Fry for 12 minutes, occasionally turning.

5.) Once the sweet potatoes have boiled, drain and mash. To mash, add a knob of butter, 1tbsp of milk and season with salt and pepper. Once you have your orange mashterpiece, place into an oven proof dish. Mix in the pepper and tomato sauce. Sprinkle Mozzarella Cheese on top and place in oven at 180°C/ gas mark 4, for 10 minutes.

6.) Boil sweetcorn for 5 minutes. Then serve and enjoy!
